Fresh Tomato Ketchup

Ingredients

  • 700 g ripe tomatoes
  • 100 g sun-dried tomatoes (in oil)
  • 1 onion
  • 2 Garlic cloves
  • 1 red bell pepper
  • 4 allspice berries
  • 1 bay leaf
  • 1 clove of nutmeg
  • 1 small piece cinnamon stick
  • 4 tbsp brown sugar
  • 1 tsp mustard powder
  • 100 ml white wine vinegar
  • Salt
  • Cayenne pepper

Instructions

    Wash the tomatoes, remove the stem ends and roughly dice them. Drain the sun-dried tomatoes and reserve the oil. Peel the onion and garlic. Dice the onion and slice the garlic. Wash the bell pepper, halve it, deseed and dice it. Place allspice, crushed bay leaf, nutmeg and cinnamon in a piece of muslin or a spice sachet and seal.

    Sauté the onion, garlic and bell pepper in 2 tbsp hot tomato oil and add the tomatoes as well as the sun-dried tomatoes. Add the spice sachet and simmer for about 15 minutes. Then stir in the sugar, mustard powder and vinegar. Simmer another 15-20 minutes until thickened. Remove the spice sachet and strain the sauce through a fine sieve into a bowl. Bring to a boil again, season with salt and cayenne pepper, and pour hot into clean bottles. Seal well and let cool.
