Tomato and Thyme Coulis

Ingredients

  • 1 Garlic clove
  • 1 stalk Celery
  • 800 g tomatoes
  • 2 tbsp olive oil

Instructions

    Peel and finely chop the garlic. Wash, trim, and dice the celery into small cubes. Wash the tomatoes and quarter them. In a pot, sauté the garlic in hot oil until translucent. Add the celery and tomatoes, simmer over medium heat for about 40 minutes. Strain through a sieve or press with a potato masher, then fold in the thyme leaves.
