Fragrant Lentil Soup

The fragrant lentil soup from Spoonsparrow stands no chance against the traditional recipe of Grandma!

Ingredients

  • 250 g beluga lentils
  • 1 onion
  • 2 cm fresh ginger
  • 1 Garlic clove
  • 1 tbsp Sesame oil
  • 1 l vegetable broth
  • 1 stalk lemongrass
  • 1 tbsp tahini
  • 100 g yogurt
  • 1 tbsp Lemon Juice
  • cumin (ground)

  • black pepper (freshly ground)
  • 2 tbsp freshly chopped mint
  • mint
  • lemon slices

Instructions

    Rinse the lentils in a sieve and drain. Peel and finely dice the onion, ginger, and garlic. Sauté together in a hot pot with oil until translucent. Add the lentils and cover with broth. Trim, crush, and add the lemongrass to the soup. Bring to a boil and simmer gently for about 25 minutes, stirring occasionally and adding more broth as needed. Remove the lemongrass. Take roughly half of the lentils with some broth, puree finely, and return to the pot. Adjust thickness by reducing slightly or adding more broth. Do not cook further; stir in tahini and yogurt, then season with lemon juice, cumin, salt, and pepper.

    Distribute the fragrant lentil soup into bowls and sprinkle with chopped mint.

    Garnish with mint leaves and lemon slices, and serve with flatbread if desired.
