Ingredients

  • 300 g red lentils
  • 6 Spring Onions
  • 1 Garlic clove
  • 10 g ginger (1 piece)
  • 2 tbsp sesame oil (30 g)
  • 1 tbsp red curry powder
  • 800 ml vegetable broth
  • 0.5 bunch coriander (10 g)
  • 2 Tomatoes
  • 2 tbsp Lime juice
  • Salt
  • Cayenne pepper

Instructions

    Rinse lentils in a sieve under hot water, drain. Wash spring onions, trim, cut one diagonally into strips, finely chop the rest. Peel garlic and finely mince. Peel ginger and grate.

    Heat oil in a pan. Sauté garlic, chopped spring onions, and ginger over high heat for 1–2 minutes until translucent. Sprinkle curry powder on top and deglaze with broth.
