Red Lentil Tomato Soup

Ingredients

  • 150 g potatoes
  • 1 onion
  • 1 Garlic clove
  • 300 g red lentils
  • 400 g diced tomatoes (canned)
  • 1 l vegetable broth
  • Salt
  • Pepper
  • 4 sprigs Parsley
  • Cayenne pepper
  • 1 splash Tabasco

Instructions

    Peel the potatoes, onion and garlic and dice them into very small cubes. Rinse the lentils under cold water and drain.

    Sauté the potatoes, onion and garlic in a non-stick pot over medium heat for 2 minutes. Add the lentils, tomatoes and broth, season with salt and pepper, and simmer on medium heat for 15–20 minutes.

    Meanwhile wash the parsley, shake off excess moisture, and chop the leaves.

  4. 4.

    Season the soup with cayenne pepper and a splash of Tabasco, ladle into four bowls and sprinkle with parsley.
