Forest Mushroom Soup

The Forest Mushroom Soup by Spoonsparrow – creamy and aromatic, easily adapted to be vegan.

Ingredients

  • 500 g fresh forest mushrooms (cleaned and optionally chopped)
  • 1 Shallot
  • 2 tbsp butter (30 g)
  • 1 tbsp flour
  • 750 ml chicken broth
  • 250 g sour cream
  • Salt
  • Pepper
  • 1 tbsp Lemon Juice
  • 2 tbsp parsley

Instructions

    Peel and finely dice the shallot. Clean and chop the mushrooms. Sauté the shallot in hot butter until translucent. Add the mushrooms and cook over high heat, stirring constantly for about 2 minutes; then sprinkle with flour, stir, and continue cooking for another 2–3 minutes.

    Pour in the chicken broth and simmer gently for 10 more minutes. Lightly whisk the sour cream and fold it into the soup. Bring to a brief boil, season with salt, pepper, and lemon juice.
