Focaccia with Onions

Ingredients
- 21 g yeast
- 400 g flour
- Salt
- 50 ml olive oil
- 5 shallots
- flour (for work surface)
- olive oil (for baking sheet and brushing)
- Pepper

Mix the yeast with about 200 ml lukewarm water. In a bowl combine the flour with 1 tsp salt. Add the dissolved yeast and olive oil to the flour mixture and knead with the hand mixer attachments into a smooth dough that no longer sticks to the bowl; adjust water slightly if needed. Cover and let rise in a warm place for about 45 minutes until doubled.

Preheat the oven to 220°C (425°F) with upper and lower heat.

Peel the shallots and slice them crosswise.

Knead the dough again on a floured surface and roll into a large flatbread about 1.5 cm thick. Place on an oiled baking sheet.

Top with onion slices, drizzle olive oil, season with salt and pepper, and bake in the preheated oven for about 25 minutes until golden brown.
