Flatsbread with Red Onions

Ingredients
- 21 g yeast (0.5 cube)
- 400 g flour
- Salt
- 6 tbsp Olive oil
- 1 Red Onion
- 1 Tbsp freshly chopped thyme
- Pepper
- flour (for work surface)

Mix the yeast with about 200 ml lukewarm water. Combine the flour with ½ tsp salt in a bowl. Add the dissolved yeast and 4 tbsp olive oil to the flour and knead into a smooth dough using the paddle attachment of an electric hand mixer. Cover and let rise in a warm place for about 45 minutes until doubled.

Preheat the oven to 220 °C (428 °F) with both top and bottom heat.

Peel the onion and slice it into rings. Mix the thyme with the remaining oil, salt, and pepper.

Knead the dough again on a floured surface and shape it into a flatbread about 1.5 cm thick. Place on a parchment-lined baking sheet, poke several holes, top with onion rings, and brush with the thyme oil. Bake in the preheated oven for 25–30 minutes until golden brown.
