Italian Flatbreads

Ingredients

  • 200 g flour (and a little extra flour for the work surface)
  • 7 tbsp olive oil
  • 150 g goat cream cheese (5% fat)
  • 2 tsp Dried thyme
  • Pepper
  • 1 egg yolk
  • coarse Sea salt
  • thyme sprig (for garnish)

Instructions

    Mix flour with 5 tbsp oil and knead with about 100 ml cold water into a smooth, elastic dough. Shape into a ball, cover and let rest for 1 hour.

    Meanwhile crumble goat cream cheese, mix loosely with thyme and season with pepper.

    Place dough on a floured work surface, divide into 8 pieces, shape into balls and roll thinly. Spread the cheese mixture onto 4 dough sheets.

    Separate egg (reserve the white). Whisk yolk with 1 tbsp water, brush dough edges with it, then cover with remaining 4 dough sheets. Press edges together with a fork. Brush flatbreads with 1 tbsp oil, place oiled side down on a hot grill. After 2–3 minutes brush again with the remaining oil, flip and grill for another 2–3 minutes until done.

    Sprinkle with sea salt and optionally garnish with thyme.
