Fluffy Chocolate Cake with Glaze
A fluffy chocolate cake topped with a glossy glaze? Yes please! With extra amounts of dark chocolate, milk and Type 1050 wheat flour, this cake becomes a healthy treat.
Ingredients
- 200 g room temperature butter
- 1 pinch salt
- 125 g unsweetened applesauce
- 100 g raw cane sugar
- 5 eggs
- 500 g wheat flour type 1050
- 3 tsp baking powder
- 100 g grated dark chocolate
- 3 tbsp cocoa powder
- 250 ml milk (1.5% fat)
- 250 g dark chocolate couverture
- chocolate shavings

Beat butter, salt, applesauce and sugar until fluffy. Separate the eggs; add yolks to the mixture and beat into a creamy consistency. Mix flour, baking powder, cocoa and chocolate together. Add this dry mix to the egg mixture and fold in gently. Gradually pour in milk until a smooth batter forms; if the batter is too dry, add more milk. Whisk the egg whites to soft peaks and fold them carefully into the batter.

Pour the batter into a greased springform pan if needed and bake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for about 60 minutes. Let the fluffy chocolate cake cool on a wire rack.

Melt dark chocolate couverture over a water bath and coat the cooled cake completely with it. Garnish with chocolate shavings.
