Spoonsparrow Florentiner: Almonds, candied fruit, and chocolate combine into a treat that should not be missing at Christmas!

Ingredients

  • 100 g candied fruit (e.g., orange peel, lemon peel, cherry pieces)
  • 150 g whipping cream
  • 100 g butter
  • 100 g cane sugar
  • 1 Tbsp vanilla sugar
  • 50 g honey
  • 2 tbsp flour
  • 100 g chopped almonds
  • 200 g almond flakes
  • 100 g dark chocolate couverture
  • 2 tsp sunflower oil

Instructions

    Chop the candied fruit finely. Bring the cream with butter, sugar, vanilla sugar and honey to a quick boil while stirring, then stir in the flour, chopped almonds, and almond flakes. Add the candied fruit and bring to a brief boil again. Remove from heat and let it cool slightly.

    Line a baking sheet with parchment paper. Using two teaspoons, place small mounds on the sheet and press them slightly flatter. Bake in a preheated oven at 180 °C (fan 160 °C, gas: level 2–3) for 10–12 minutes. Remove the Florentiner and let cool.

    Chop the chocolate couverture and melt it over a double boiler with sunflower oil. Dip or brush the underside of each Florentiner, place the front side down on parchment paper, and allow to dry.
