Whole Wheat Waffles with Peach Berry Topping
The whole wheat waffles with peach berry topping from Spoonsparrow are perfect for clean baking.
Ingredients
- 125 g spelt whole‑wheat flour
- 45 g fine rolled oats
- 1 tsp Baking powder
- a pinch salt
- 35 g softened butter
- 2 Eggs
- 225 ml milk (3.5% fat)
- 2 peaches
- 100 g blueberries
- 0.5 Vanilla bean
- 2 tbsp Maple syrup
- 1 tbsp Lemon Juice
- 10 g mint (half a sprig)
- 1 tbsp liquid coconut oil

Whisk flour, oats, baking powder and salt in one bowl. In another bowl beat butter and eggs until fluffy. Alternately add the dry mixture and milk to the wet ingredients, stirring until smooth.

Wash peaches, pat dry, halve them, remove pits, and slice thinly. Wash blueberries and pat dry.

Split the vanilla bean lengthwise and scrape out the seeds. Mix maple syrup, lemon juice and vanilla seeds together. Rinse mint, pat dry and strip leaves from stems. Combine peach slices and blueberries with the vanilla dressing, folding in mint leaves.

Spread a little coconut oil on a waffle iron, pour a ladleful of batter onto it, and bake for about 3 minutes. Repeat with remaining batter; keep finished waffles warm in the oven if needed. Top each waffle with the peach‑berry mixture and serve immediately.
