Ingredients
- 100 g Soft Butter
- 50 g powdered sugar
- 1 egg
- 200 g Flour
- flour for dusting

- 30 g Butter
- 4 tbsp sugar
- 1 tbsp honey
- 70 ml whipping cream
- 100 g almond sticks (sliced)
- 40 g chopped almonds
- 75 g mixed candied dried fruit (chopped)
Instructions

For the dough, beat butter with powdered sugar and egg until creamy. Add flour and knead quickly into a smooth dough. Wrap in cling film and chill.

For the topping, combine butter, sugar, honey, and cream in a saucepan. Bring to a boil while stirring. Add chopped almonds, almond sticks, and candied fruit. Remove from heat and let cool.

Roll out dough on floured surface to about 0.5 cm thickness. Cut circles of ~5 cm diameter and place on parchment-lined baking sheet. Spread almond caramel mixture over them and bake in preheated oven at 160°C fan for about 15-20 minutes. Let cookies cool on the tray.
