Ingredients

  • 1 cube yeast (42 g)
  • 2 tsp salt
  • 3 tbsp sugar
  • 400 g wheat flour
  • 400 g spelt flour
  • 125 g millet
  • 0.5 tsp cumin powder
  • 0.5 tsp Coriander powder
  • 0.5 tsp fennel powder
  • 75 g flaxseed

    Dissolve the yeast, salt and sugar in 450 ml lukewarm water. Mix both flours with millet, cumin, coriander, fennel and flaxseed. Add the yeast mixture to the flour blend and knead into a smooth dough; if sticky, fold in more flour. Cover and let rise in a warm place for about 45 minutes.

    Fill the dough into a loaf pan lined with parchment paper and place it in a cold oven. Set the oven to 190 °C and bake the bread for approximately 60 minutes (test with a skewer).
