Flan mit Brokkoli

Ingredients
- 600 g Broccoli
- 1 onion
- 1 tbsp butter
- 70 g crème fraîche
- 2 Eggs
- 2 egg yolks
- Salt
- Pepper (freshly ground)
- 1 tsp ground coriander
- butter (for the molds)
Instructions

Wash and trim the broccoli, separating florets from stems. Peel the stems and dice them small.

Peel and finely chop the onion; sauté in hot butter in a pot until translucent. Add the broccoli, briefly cook, pour in 1/2 cup water, cover, and steam on medium heat for about 8 minutes. Set aside some florets for garnish. Puree the remaining broccoli.

Stir in the crème fraîche, eggs, and egg yolks; season with salt, pepper, and coriander.

Grease eight small ramekins or heat‑proof cups, fill with the broccoli custard, cover each with a bit of buttered foil, and place them in a pot. Pour boiling water up to just below the rim of the ramekins, bring to a boil, then reduce heat. Simmer covered on low heat for 30 minutes until set. Do not let the water boil. Garnish with reserved florets before serving.
