- 300 g North Sea shrimp
- 200 g celery sticks
- 100 g whipping cream
- 2 tbsp lemon juice
- 2 Eggs
- pepper (ground)
- Salt
- 1 tbsp chopped parsley
- nutmeg
- butter (for the molds)

Wash, trim and slice celery sticks into thin rounds. Boil in salted water for about 5 minutes until tender, then drain. Rinse shrimp and pat dry with kitchen towels. Drizzle lemon juice over shrimp, mix, and let sit briefly; if wet, gently rub between towels to remove excess moisture.

Whisk cream and eggs together, seasoning with pepper and salt. Add nutmeg and parsley for flavor. Combine shrimp and celery in a bowl, pour the egg mixture over, and stir until well blended. Adjust seasoning as needed.

Rinse molds with cold water and grease them. Fill each mold with the shrimp mixture. Bake in a water bath at 160 °C (fan) for about 20–30 minutes. Carefully remove from the oven, then serve on a plate topped with grated cheese and toasted bread slices.
