The simple flaky apple cake without egg from Spoonsparrow is easy to bake and always delights!
Ingredients
- 200 g spelt whole‑grain flour
- 1 pinch salt
- 125 g butter
- 2 tbsp cold water
- 5 apples
- 2 tbsp whole‑grain breadcrumbs
- 2 tbsp lemon juice
- 2 tbsp Maple syrup

For the dough, chop flour, salt and butter with a knife, then knead with water into a smooth dough. Wrap or cover and chill for 1 hour.

Peel, quarter, core and slice the apples into wedges. Drizzle with lemon juice and mix well.

Roll out the dough on a floured surface and place it in a pie tin. Trim excess edge. Sprinkle breadcrumbs over the base. Arrange apple slices fan‑shaped on top and drizzle with maple syrup. Bake in a preheated oven at 180 °C (160 °C fan, gas level 2–3) for about 40–45 minutes. Remove from oven and cool. Serve warm or cold, with or without whipped cream as desired.
