Christmas Pork Roast with Cloves and Pearl Onions

Ingredients
- 4 tbsp apple jelly
- 4 tbsp Lemon juice
- 1 pinch cayenne pepper
- 1.5 kg pickled pork roast (with rind)
- 5 g cloves (for studding)
- 500 g pearl onions
- Salt
- ground black pepper

Preheat the oven to 180°C (356°F) with both fan and top heating.

Warm the apple jelly, then mix in lemon juice and cayenne pepper. Rinse the pork roast under cold water, pat dry, and cut a diamond pattern into the rind. Insert cloves at the corners of each diamond. Place the roast in a roasting tin and pour about 200 ml water over it. Brush the roast with some glaze and bake for approximately 1.5 hours, brushing with glaze repeatedly and adding more water if needed.

Meanwhile blanch the pearl onions briefly, shock them in cold water, then peel. After about an hour of roasting, add the onions to the pan and season with salt and pepper.

Slice the roast and serve with the pearl onions.
