Ingredients
- 500 g white fish fillet (e.g., cod)
- 1 Egg white
- 1 tsp lemon juice
- 1 handful coriander leaves
- 3 tbsp breadcrumbs
- Salt
- Pepper
- vegetable oil (for frying)
- lemon slice (for garnish)

Wash the fish fillet, pat dry with paper towels and cut into small pieces. Blend with the egg white and lemon juice in a blender until not too fine. Wash coriander, shake dry and set aside a few stems for garnish; finely chop the rest.

Combine the fish mixture with breadcrumbs and chopped coriander to form a well-mouldable dough. Season with salt and pepper. Shape into 8-12 patties and fry in hot oil in a non-stick pan on both sides about 6 minutes until golden brown.

Drain on paper towels and serve garnished with lemon slices.
