Ingredients

  • 600 g Chicken breast fillet
  • 1 tsp Sambal oelek
  • 3 tbsp peanut oil
  • 2 tsp sesame oil
  • 400 g whole wheat pasta (farfalle)
  • Salt
  • 70 g peanuts
  • 2 Organic Limes
  • 3 Tbsp peanut butter (15 g each)
  • 2 tsp soy sauce
  • 0.5 bunch chives (10 g)
  • 1 handful mint

Instructions

    Pat chicken breast fillet dry and cut into strips. Mix with Sambal oelek and the two oils. Heat a pan and fry the meat for 3 minutes over medium heat. Remove from pan and set aside.

    Cook pasta in plenty of boiling salted water for 9–11 minutes until al dente. Drain and let rest.

    Chop peanuts and roast them golden yellow in the pan. Squeeze juice from 1½ limes. Add peanut butter, pour lime juice and soy sauce over it. Return meat to the pan.

    Toss drained pasta with the pan contents. Wash herbs and chop finely. Cut remaining half of lime into wedges. Plate pasta on dishes, sprinkle with herbs and garnish with lime wedges.
