Ingredients

  • 500 g cherry tomatoes
  • 2 handfuls spinach
  • 2 cloves garlic
  • 100 g raw ham
  • 2 tbsp olive oil
  • 1 tbsp Tomato Paste
  • 150 ml red wine
  • 30 g pine nuts
  • 350 g spaghetti
  • Salt
  • 4 cod fillets (about 160 g each)
  • black pepper (freshly ground)
  • 2 tbsp butter
  • a pinch sugar
  • 2 tbsp coarsely chopped basil

Instructions

    Wash, clean and halve the tomatoes. Wash, clean, dry spin and roughly chop the spinach. Peel and finely chop the garlic. Slice the ham into strips and sauté with the garlic in a pan over hot oil for a short time. Stir in the tomato paste and deglaze with wine. Add half of the tomatoes and simmer for about 15 minutes until they break down. If needed, add a little water.

    Toast the pine nuts in a pan.

    Cook the spaghetti in salted water al dente.

    Rinse the fish, pat dry and season with salt and pepper. In a hot non‑stick pan, cook in butter on both sides slowly for 6–8 minutes until golden brown.

    Add the remaining tomatoes with spinach to the tomato sauce and let it heat for 2–3 minutes. Season with salt, sugar and pepper. Toss the drained noodles and arrange on plates. Place the fish on top and sprinkle with pine nuts and basil before serving.
