Fish Patties with Vegetables and Rice

Ingredients
- 200 g shrimp (frozen, ready to cook)
- 2 shallots (chopped)
- 50 g butter
- 700 g sea bass fillet
- 3 eggs
- 2 tbsp rice flour (as needed)
- 2 tbsp coriander (chopped)
- 1 tsp lemongrass (finely chopped)
- Salt
- Pepper
- oil (for frying)
- 200 g basmati rice
- 4 lime wedges
- 2 carrots
- 1 tsp oil
- 1 green apple
- 1 lemon
- Salt
- Pepper

Sauté shallots in a little oil until translucent, then add shrimp, sea bass fillet, eggs, herbs, salt and pepper; blend finely in a mixer. Add rice flour as needed to achieve a firm, moldable consistency.

Cook the basmati rice according to package instructions.

Shape 8-12 patties and fry each side for about 3-5 minutes in hot oil until golden brown or deep‑fry for 3-5 minutes; drain on paper towels and keep warm at 80°C in the oven.

Peel carrots, wash apple, cut both into long sticks. Briefly sauté carrots in oil, squeeze lemon juice, add to mixture, combine with apple sticks, season with salt and pepper. Plate patties with vegetable salad and rice, garnish with lime wedges, and serve.
