Fish Ragout with Rice

Ingredients
- 1 onion
- 1 Garlic clove
- 2 cm fresh ginger
- 6 tomatoes
- 2 tbsp olive oil
- 200 ml dry white wine
- 600 g fish fillet (e.g., cod)
- 1 tsp ground turmeric
- Salt
- Pepper
- 2 tbsp freshly chopped parsley

Peel the onion, garlic, and ginger. Slice the onion and ginger into thin strips and finely chop the garlic. Wash the tomatoes, blanch them, cool, peel, quarter, and seed. Sauté the onion with garlic and ginger in hot oil for 1-2 minutes. Deglaze with wine and add the tomatoes. Season with turmeric, salt, and pepper; simmer gently for about 5 minutes. Rinse the fish, pat dry, cut into bite-sized cubes, add to the tomato mixture, and cook for another ~5 minutes over low heat. Finish by tasting and sprinkling parsley.
