Fish Curry with Rice

Ingredients
- 600 g cod fillet
- 2 shallots (cut lengthwise)
- 2 tsp ginger (freshly grated)
- 2 Garlic cloves
- 6 tbsp Coconut milk
- 2 tbsp sesame oil
- 4 tbsp light soy sauce
- 1 tsp chili powder
- 1 tbsp Lemon Juice
- 1 tbsp ground almond kernels
- 2 tsp Curry powder
- 1 can saffron powder
- 2 tbsp coriander (finely chopped)

- 200 g basmati rice
- 3 cloves of peppercorns
- 1 stick cinnamon
- 1 tsp cardamom pods
- Salt
- pepper (ground)
Instructions

Wash the rice thoroughly under running water, then bring double the amount of water to a boil with peppercorns, cinnamon and cardamom; cover and simmer on low heat until cooked.

Cut the cod fillet into bite-sized pieces.

Sauté the shallots in hot sesame oil, add the pressed garlic and ginger and cook briefly; pour in coconut milk and soy sauce, stir in curry powder, chili powder, saffron, almonds, lemon juice, salt and pepper. Add the fish and simmer for about 6 minutes, then fold in chopped coriander.
