Glazed Beets
Glazed Beets with Maple Syrup and Parsley: This vegetable is high in fiber; it keeps blood sugar levels stable and provides long-lasting satiety.
Ingredients
- 350 g red beet
- 20 g butter
- 1 tbsp Maple Syrup
- Salt
- Pepper
- 2 stalks Parsley
Instructions

Peel the beets and cut them in half. Slice each half into three strips.

Place the beet slices in a non-stick pan (with a lid that can close) so that the bottom is no longer visible.

Add enough water to cover the beets halfway.

Add butter, maple syrup, salt, and a pinch of pepper.

Cover and bring to a boil, then simmer over medium heat while stirring occasionally for 10 minutes.

Remove the lid and cook the beets uncovered for another 4–5 minutes until all the liquid has evaporated.

Continue cooking with stirring for an additional 4 minutes until the beets are caramelized all around.

Meanwhile, wash the parsley, shake off excess water, remove leaves from stems, chop, and fold into the beets at the end of cooking.
