Fish Curry with Peppers and Onions

Ingredients

  • 600 g fish fillet (e.g., swordfish)
  • 4 onions
  • 4 green peppercorns
  • 2 tbsp Vegetable oil
  • 1 tbsp green curry paste
  • 150 ml fish stock
  • light fish sauce
  • coriander leaves (for garnish)

Instructions

    Rinse the fish fillet, pat dry and cut into cubes. Peel and roughly cube the onions. Rinse the peppercorns and pat dry.

    Briefly sear the fish in hot oil in a non-stick pan. Add the onions and peppercorns and sauté for 1-2 minutes. Stir in the curry paste and deglaze with the stock. Simmer gently for about 3-4 minutes, then season with fish sauce.

    Serve garnished with coriander leaves.
