Fruitful Fish Curry

Ingredients
- 1 bell pepper
- 2 Spring Onions
- 1 tbsp oil
- 350 g cod fillet
- Salt
- ground black pepper
- curry powder
- 400 ml unsweetened coconut milk (can)
- 250 g pineapple chunks
- 2 tbsp basil
- 4 tbsp soy sauce
Instructions

Wash, trim, halve, seed and remove the white membranes from the bell pepper, then dice it.

Wash and slice the spring onions into rings. Sauté both in oil for about 8 minutes. Cut the fish into cubes and season with salt and pepper.

Add 1/2 tsp curry to the vegetables and toast briefly. Pour in coconut milk, bring to a boil, then add the pineapple chunks and fish. Cover and simmer for 5 minutes.

Stir in basil and season with soy sauce and additional curry as desired.
