Fish Croquettes

Ingredients

  • 600 g tuna
  • 1 shallot (finely chopped)
  • 1 garlic clove (finely chopped)
  • 0.5 bunch coriander (coarsely chopped)
  • 1 untreated lemon (zest only)
  • 1 pinch turmeric
  • 1 pinch piment (ground)
  • 1 egg
  • optional breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • oil (for frying)

Instructions

    Wash the fish, pat dry and finely chop. In a bowl combine with shallot, garlic, coriander, lemon zest, turmeric, piment and egg; knead together. If the dough is too soft, fold in breadcrumbs.

    Season with salt and pepper, shape into about 6 cm long cylinders. Fry in hot oil on all sides for about 5 minutes and serve over tomato-cucumber salad if desired.
