Fish Burger with Curry Mayo

Ingredients

  • 100 g mayonnaise
  • 2 tsp Curry powder
  • 1 tbsp freshly chopped coriander leaves
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 2 red onions
  • a handful of Lollo biondo lettuce
  • 2 Tomatoes
  • 100 g peanuts
  • 4 fish fillets about 160 g each (e.g., redfish, pollock… )
  • 4 tbsp Vegetable oil
  • 4 hamburger buns

Instructions

    Whisk the mayonnaise with curry powder, coriander leaves and lemon juice; season with salt and pepper.

    Peel the onions and slice thin rings. Separate the lettuce into leaves, rinse, drain and pat dry. Wash the tomatoes, cut off the stem ends and slice. Finely chop the peanuts. Season the fish fillets with salt and pepper and press both sides into the peanuts. Heat oil in a pan and fry the fillets 2–3 minutes per side until golden brown.

    Halve the buns and lightly toast them. Layer lettuce, onions, tomatoes and some curry mayo on the bottom halves, place one fish fillet on top, then cover with the upper bun halves. Serve remaining mayo on the side.
