Asian-Style Chicken Satay with Peanut Sauce

Ingredients
- 200 g Long grain rice
- Salt
- 600 g Chicken breast fillet
- Pepper
- 4 tbsp plant oil
- 1 onion
- 2 Garlic cloves
- 50 g unsalted peanuts
- 4 tbsp peanut butter
- 400 ml heavy cream (at least 30% fat)

Cook the rice in a 1:2 ratio of water to rice with salt until tender.

Wash, pat dry and cube the chicken. Skewer three pieces per stick and season with salt and pepper. Sear the skewers in a hot grill pan with 2 tbsp oil for 5-7 minutes on each side.

Meanwhile, peel and finely chop the onion and garlic. Roughly pulse the peanuts in a blender. Heat the remaining oil in a pan, sauté onion and garlic until translucent (1-2 min). Add peanuts and peanut butter, then pour in cream. Simmer for 5-10 min over medium heat, seasoning with salt and pepper.

Plate the cooked rice on warmed dishes, top with the satay skewers and drizzle the peanut sauce over them. Serve with chips and a cabbage salad.
