Fish Bites

Ingredients
- 4 slices whole wheat bread
- Salad leaves (e.g., lettuce)
- 200 g smoked trout fillet (whole piece)
- 100 g cream cheese (plain)
- 0.5 untreated lemon (juice)
- 4 tbsp sour horseradish (jar)
- Salt
- pepper (ground)
- 1 Kiwi
- dill sprigs (for garnish)
- 100 g alfalfa sprouts
- 4 tbsp sour horseradish (jar)
- 6 tbsp cream cheese (plain)
- 1 tbsp Lemon Juice
- Cayenne pepper
- 300 g smoked salmon (slices)
- 16 curved potato chips
- chives (for garnish)

For the kiwi-salmon bites cut the bread slices diagonally twice. Wash, dry and tear the salad into small pieces and place on the bread. Cut the fish fillet into suitable pieces and lay them on the salad. Peel the kiwi, cut into chunks and garnish the fish bites with it.

Mix cream cheese with lemon juice and sour horseradish, season with salt and pepper, fill a pastry bag and spray small dots onto the kiwi pieces. Serve garnished with dill.

For the chips with salmon rolls rinse the sprouts, set aside some, and mix the rest with sour horseradish, cream cheese, lemon juice and a pinch of cayenne pepper.

Lay the salmon lightly on a sushi mat, spread the cream over it and roll. Slice the roll into 1.5 cm thick pieces.

Spread the potato chips on a plate. Just before serving sprinkle some sprouts over the chips and place one salmon roll on each (the chips soften quickly). Garnish with chives and serve.
