Ingredients

  • 500 g waxy potatoes
  • Salt
  • 500 g white fish fillet (e.g., cod)
  • 1 onion
  • 120 g smoked pork belly (cubed)
  • 20 g butter
  • Pepper (freshly ground)
  • 2 tbsp freshly chopped parsley

    Wash the potatoes and cook them in boiling salted water for about 20 minutes. Drain, rinse with cold water, peel, and let cool. Wash the fish, pat dry, and cut into bite-sized pieces.

    Peel the onion and dice finely. Render the bacon in a pan, add a little butter, and sauté the onion until translucent. Slice the potatoes, add them to the pan, and fry, turning occasionally, until golden brown. Add the fish pieces and gently turn them as well, cooking until they are also golden brown. Season with salt and pepper, then sprinkle with freshly chopped parsley before serving.
