A fine potato bake with goat cheese featuring fresh root vegetable ingredients.
Ingredients
- 40 g flour
- 2 tbsp plant oil
- 2 tbsp olive oil
- 1 tsp mustard powder
- 0.25 tsp paprika powder
- 0.25 tsp chili powder
- 1 clove garlic (pressed)
- 150 ml milk
- 4 tbsp packaged mashed potato mix
- 5 eggs
- 75 g goat cheese
- 25 g Pecorino (coarsely grated)
- Salt
- Pepper (freshly ground)

Roast the oils with the spices and garlic in a pan for 1 minute. Let cool briefly, then stir in flour, milk, and mashed potato mix.

Reheat until the mixture bubbles, let it cool well. Separate the eggs; whisk yolks into the flour mixture. Crumble goat cheese and fold in Pecorino.

Beat egg whites stiffly, gently fold into the cheese mixture. Fill two-thirds of greased ramekins with the batter and bake at 220°C for 20 minutes.
