Potato Gratin with Kale

Ingredients
- 300 g kale leaves (stem removed, cleaned and washed)
- 500 g Potatoes
- 200 g onions
- 3 Carrots
- 3 tbsp olive oil
- 200 g Gruyère cheese (or hard cheese, grated)
- Salt
- black pepper (freshly ground)
- nutmeg
- 3 tbsp capers
- 2 Garlic cloves
- 0.5 tsp coriander seeds (ground)
- 150 g crème fraîche
- 2 tsp mustard
Instructions

Peel the potatoes and slice them thinly.

Peel and finely dice the onions and carrots, then sauté in 1 tbsp oil until translucent; add the potato slices, half of the cheese, and the onion-carrot mixture, seasoning with salt, pepper, and nutmeg.

In a large pot, wilt the kale with 1 tbsp oil for 5 minutes; stir in pressed garlic, capers, mustard, and crème fraîche, seasoning with salt, pepper, and coriander.

Grease a fireproof baking dish with remaining oil.

Combine the potato-carrot mixture with the kale loosely, spread into the dish, top with remaining cheese, and bake at 180°C for about 45 minutes.
