Fine Fennel Salad

Starter: A refined fennel salad with delicately sliced salami! Fennel protects cells from free radicals with vitamin C, E, and beta-carotene.

Ingredients

  • 2 bulbs fennel
  • 1 Red Onion
  • 1 small organic orange
  • 0.5 lemon
  • 100 g fennel salami (very thin slices)
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • Salt
  • Pepper
  • 3 tbsp cold-pressed olive oil

Instructions

    Clean, rinse, pat dry the fennel and slice into very thin sheets with a vegetable peeler or slicer.

    Peel and finely dice the onion. Rinse the orange hot water, dry, and grate about half of its zest finely.

    Squeeze the orange to obtain 2 tbsp juice. Squeeze the lemon for 1 tbsp juice.

    Arrange fennel, onion cubes, and salami slices decoratively on a plate.

    Whisk orange juice, lemon juice, honey, mustard, salt, and pepper. Fold in olive oil. Pour the dressing over the ingredients, let sit 10 minutes, then serve.
