Ingredients
- 2 bulbs fennel
- 1 Red Onion
- 1 small organic orange
- 0.5 lemon
- 100 g fennel salami (very thin slices)
- 1 tsp Honey
- 1 tsp Dijon mustard
- Salt
- Pepper
- 3 tbsp cold-pressed olive oil
Instructions

Clean, rinse, pat dry the fennel and slice into very thin sheets with a vegetable peeler or slicer.

Peel and finely dice the onion. Rinse the orange hot water, dry, and grate about half of its zest finely.

Squeeze the orange to obtain 2 tbsp juice. Squeeze the lemon for 1 tbsp juice.

Arrange fennel, onion cubes, and salami slices decoratively on a plate.

Whisk orange juice, lemon juice, honey, mustard, salt, and pepper. Fold in olive oil. Pour the dressing over the ingredients, let sit 10 minutes, then serve.
