Filled Rice Paper Rolls

Delicious rice paper rolls with smoked turkey breast, bell pepper, orange and coriander: low fat, high nutrients – hardly any calories to spare!

Ingredients

  • 175 g smoked turkey breast (sliced)
  • 1 yellow bell pepper
  • 1 bunch scallions
  • 4 stems coriander
  • 1 orange
  • 4 rice paper sheets (30 cm diameter)
  • 6 lettuce leaves
  • Salt
  • Pepper
  • soy sauce (optional)
  • chili sauce (optional)

Instructions

  1. 1.

    Slice the turkey into thin strips. Quarter the bell pepper, remove seeds, wash and cut into thin strips. Trim and wash the scallions, then slice into thin rings. Wash coriander, shake dry and roughly chop.

    Peel the orange with a sharp knife so that all white pith is removed.

    Cut the fruit flesh from the membranes while catching the juice.

    Soak each two rice paper sheets in 50 °C warm water for 45 seconds.

    Moisten a kitchen towel well and lay it on the work surface. Remove the rice paper from the water and place overlapping on the towel. Wash and shake dry the lettuce leaves.

    Lay three lettuce leaves on the rice paper. Distribute half of all prepared ingredients over them, leaving a border of at least 2 cm around the edge. Season the filling with salt and pepper.

    Sprinkle coriander leaves over the filling. Using the towel, roll the rice paper tightly. Use any remaining ingredients – except soy or chili sauce – in the same way.

    Cut the finished rolls into 3 cm long pieces. Place on a plate and serve with soy or chili sauce as desired.
