Ingredients

  • 80 g flour
  • 2 small eggs
  • 150 g milk
  • 1 tsp lemon zest
  • 200 g quark
  • 150 g yogurt
  • 50 ml whipping cream
  • 0.5 vanilla bean (scraped seed)
  • powdered sugar
  • butter
  • 4 raspberries
  • paper molds (optional)

Instructions

    Place paper molds in 4 glasses as desired.

    Whisk flour and milk until smooth. Stir in eggs and lemon zest, then let rest for about 20 minutes. Cook pancakes in a lightly buttered large pan, each side until golden.

    Mix quark with yogurt, cream, vanilla seed, and 1-2 tbsp powdered sugar.

    Fold warm pancakes into quarters twice and place them in the glasses. Fill a piping bag with the cream and pipe between layers. Top each with a raspberry and dust with powdered sugar before serving.
