Penne pasta always tastes great again: try this nutty recipe from Spoonsparrow!

Ingredients

  • 100 g walnuts
  • 3 tbsp butter
  • 150 g crème fraîche
  • 30 g freshly grated Parmesan
  • Salt
  • ground pepper
  • 500 g farfalle (bowtie pasta)
  • fresh herb leaves for garnish

Instructions

    Take a few walnuts aside, finely grind the rest. Heat 2 tbsp butter and lightly toast the ground walnuts in it.

    Stir in crème fraîche and bring to a gentle boil while stirring. Add Parmesan and season with salt and pepper.

    Cook farfalle in plenty of salted water according to package instructions until al dente. Warm the remaining butter and briefly roast the whole walnuts in it.

  4. 4.

    Reserve 3-5 tbsp of pasta cooking water. Drain the farfalle, then mix with the reserved water and walnut sauce. Plate the pasta, top with roasted walnuts, and garnish with herb leaves.
