Ingredients

  • 4 fillets (about 160 g)
  • 1 Tbsp clarified butter
  • 4 slices sliced cheese
  • 1 fresh red peppercorn (deveined, cut into thin strips)
  • 600 g vegetable onion (coarsely chopped)
  • 4 Garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp coriander (freshly chopped)
  • juice of one lemon
  • Salt
  • pepper (ground)

Instructions

    Sauté onions, pressed garlic and peppercorns in hot oil until translucent, add 3 tbsp water and simmer for about 15 minutes, stir in coriander and blend everything into a puree, season with lemon juice, salt and pepper.

    Rub steaks with pepper and sear on both sides in hot clarified butter for 2 minutes each side, then place them in a baking dish, spread sauce beside them and top with cheese. Bake at 200°C until the cheese melts. Serve with flatbread.
