Ingredients
- 2 Filets (about 400g each, 4 cm thick)
- 2 tbsp plant oil
- 2 tbsp cold butter
- Salt
- Pepper
- 2 untreated oranges
- 150 g whipping cream
- 2 tbsp orange liqueur
- 500 g waxy potatoes
- 3 tbsp clarified butter
- Salt
- Pepper
Instructions

Peel, wash, roughly grate the potatoes and squeeze out excess moisture. Heat clarified butter in a non-stick pan and place small potato paddles in it; brown each side for 8 minutes until golden.

Wash the meat, pat dry, season with salt and pepper, then sear in hot oil for 3-4 minutes per side. Remove, wrap in foil. Squeeze one orange, deglaze the pan with its juice, stir in cream.

Thinly slice a second orange, tear zest. Cut the beef fillets into thin slices, spoon sauce over them, top with orange slices and zest, serve with potato rösti. Add a dab of ice‑cold butter on each piece.
