Filetsteak with Fruits

Ingredients
- 2 pieces beef fillet (from the middle section, about 200 g each)
- 2 pears
- juice of one lemon
- 20 g clarified butter
- 250 ml dry white wine
- 1 tbsp oil
- 1 tbsp butter
- 200 ml veal stock
- 2 tbsp cranberry compote (or lingonberry compote)
- Salt
- pepper (ground)
- 1 sprig rosemary
Instructions

Wash the meat, pat dry, season with pepper and tie each piece with kitchen twine. Wash and peel the pears, drizzle with lemon juice. Heat clarified butter, sauté the pears all around, pour in wine and steam covered for about 12-15 minutes until tender; set aside warm.

Heat oil with butter, sear the meat on both sides strongly, salt, then cook each side another 3-4 minutes over medium heat. Remove, keep warm. Reduce the pan drippings with 100 ml of pear juice, add veal stock and quickly reduce to half. Stir in cranberries and season with salt and pepper.

Before serving remove kitchen twine from the meat and arrange the meat with pears on preheated plates. Garnish with rosemary.

Serve with vegetables and mashed potatoes if desired.
