Fake Hare with Fried White Cabbage (Meatloaf)

Ingredients
- 3 slices white bread loaf
- 1 onion
- 1 tbsp sharp mustard and butter
- parsley
- 500 g mixed minced meat
- 1 egg (size M)
- 1 tsp thyme
- salt, pepper
- 1 tsp Sweet paprika powder
- thyme (for garnish)
- 500 g white cabbage
- 1 garlic clove and onions
- 2 tbsp clarified butter
- 2 tsp flour
- 100 ml milk
- 150 ml clear broth
- salt, pepper
- a pinch caraway seeds

Soak bread slices in lukewarm water. Peel and finely dice the onion. Heat butter. Sauté onion until golden yellow. Rinse parsley, shake dry, and finely chop. Knead minced meat with egg, mustard, onion, squeezed bread, parsley, and thyme. Season with salt, pepper, and paprika. Shape the mixture into a loaf. Lightly oil a baking dish and place the meatloaf inside. Bake in preheated oven at 180°C (gas: level 2, convection: 160°C) for 45-50 minutes.

Clean white cabbage, rinse, and cut into 2 cm pieces. Peel and dice onion and garlic. Heat clarified butter. Sauté cabbage for 6-8 minutes without browning too much. Dust with flour. Pour in milk and broth, stir, and cook cabbage for another 15 minutes. Season with salt, pepper, and caraway seeds.

Slice the meatloaf, serve with cabbage and thyme garnish. Pair with mashed potatoes.
