Ingredients
- 4 Filets (about 160 g each)
- 2 tbsp oil
- 1 bundle baby carrots
- 1 green zucchini
- 1 yellow zucchini
- 400 g mini patisson
- 100 ml Vegetable broth
- 2 tbsp butter
- 2 tbsp chopped parsley
- 6 shallots
- 20 ml balsamic vinegar
- 200 ml meat broth
- 60 g blue cheese
- Salt
- ground pepper

Wash and pat steaks dry. Season with salt and pepper, then sear in hot oil on all sides. Bake in a preheated oven at 100°C for about 25-35 minutes, depending on preference.

Peel shallots, quarter two, and slice the rest into rings. Sauté rings in the pan drippings. Slowly brown, deglaze with meat broth. Simmer for 8-10 minutes, then season with balsamic vinegar, salt, and pepper.

Peel carrots but leave a little green on them.

Wash, trim zucchini, cut into ~4 cm strips. Sauté in hot butter with shallots and carrots. Deglaze with vegetable broth, cover and simmer for about 4 minutes. Reduce liquid, add parsley, season with salt.

Spread sauce on warmed plates, place meat on top, sprinkle crumbled blue cheese around the meat. Arrange some vegetables on the steak, serve remaining in a separate bowl.
