Ingredients
- 1 small organic lemon
- 750 ml milk (3.5 % fat)
- 1 vanilla pod
- 185 g rice pudding grains
- 1 sprig rosemary
- 4 fresh figs
- 3 tbsp honey
- 1 tbsp butter
Instructions

Rinse the lemon hot, dry it and grate 1 tsp of zest finely. Cut the lemon in half, squeeze a little juice from one half and set aside. Bring the milk with lemon zest and split vanilla pod to a boil in a pot. Add the rice pudding grains and simmer on low heat for about 35 minutes, stirring occasionally.

Wash rosemary, pat dry and tear off leaves. Wash figs and halve them. In a small pan lightly caramelise 1 tbsp honey with butter. Mix figs with rosemary, remove from heat and stir in lemon juice.

Stir remaining honey into the rice pudding, discard vanilla pod, serve in bowls or cups garnished with figs.
