Ingredients
- 400 g field salad
- 300 g smoked salmon (sliced)
- 2 fresh egg yolks
- 1 tbsp Medium-hot mustard
- 80 ml olive oil
- Salt
- pepper (ground)
- Worcestershire sauce
- Lemon juice

Wash and dry the field salad thoroughly. Whisk the egg yolk and mustard until creamy. Gradually whisk in the olive oil. Season the dressing with salt, pepper, Worcestershire sauce and lemon juice.

Slice the smoked salmon into strips. Gently combine the field salad and salmon, arrange on plates and drizzle with the mustard dressing.
