Ingredients
- 400 g fettuccine (band pasta)
- olive oil (cold-pressed)
- lemons
- Lemon juice
- 2 tbsp chopped parsley
- 1 tbsp chopped chives
- 300 g mixed forest mushrooms (or substitute with button mushrooms)
- Salt
- Pepper (freshly ground)
- 10 g butter
- 1 mozzarella (125 g, cut into small cubes)

Clean and finely chop the mushrooms. Heat 4 tbsp oil in a pan and sauté the mushrooms over medium heat. Add lemon zest and cook briefly, then season with salt and pepper.

Cook the pasta in plenty of salted water until al dente, then drain. Mix the pasta with the mushrooms, parsley, chives, lemon juice, butter, and season again with salt and pepper. Finally fold in the mozzarella cubes, plate on dishes, and serve immediately.
