Orange Basil Pasta

Ingredients
- 4 oranges
- 3 shallots
- 3 Tbsp finely chopped basil
- 4 tbsp red wine vinegar
- 200 g butter
- 400 g spaghetti
- Salt
- pepper (ground)
- finely chopped basil (for garnish)

Grate the zest of an unpeeled orange. Squeeze juice from this and another orange, set aside. Thoroughly peel the remaining oranges with a sharp knife, removing the white pith. Cut fruit segments from the separating membranes and finely chop them. Peel and finely mince the shallots.

Bring the shallots with red wine vinegar to a boil in a pot. Reduce over low heat until it thickens by two thirds. Add orange juice and zest. Stir in basil and let the sauce thicken into a syrupy consistency. In a small saucepan, melt 1 tbsp of butter and sauté the orange segments for 4-5 minutes, stirring frequently.

Place the pot in a hot water bath and gradually whisk in the remaining butter in small portions to create a creamy emulsion. Cook the spaghetti in boiling salted water until al dente, then drain. Transfer to a bowl, fold in the shallot sauce and orange cream, season with salt and pepper, and sprinkle with basil before serving.
