Fettuccine in Cheese Sauce

Ingredients

  • 400 g green fettuccine
  • Salt
  • Pepper
  • 200 g Gorgonzola
  • 250 g heavy cream
  • 1 Garlic clove
  • Lemon juice
  • 1 bunch flat-leaf parsley

Instructions

    Add the fettuccine to plenty of boiling salted water and cook according to package instructions for about 8 minutes until al dente. Then drain into a colander.

    While the pasta cooks, remove the rind from the Gorgonzola and cut it into small pieces. Heat the cream in a small saucepan, add the Gorgonzola, and melt over low heat while stirring frequently. Let the sauce simmer for 3 minutes on low heat.

    Season with salt and pepper. Peel and press the garlic clove, then add to the sauce and finish with lemon juice.

    Wash and dry the parsley. Pull the leaves from the stems and finely chop. Arrange the well-drained pasta on warmed plates, pour the sauce over it, and sprinkle with parsley. Serve the fettuccine immediately.
