Feta‑Stuffed Bell Peppers

Ingredients
- 8 small bell pepper halves (yellow and red)
- Salt
- 1 tbsp Olive Oil
- 8 salad leaves
- 1 clove garlic
- 1 stalk basil
- 2 tbsp chives
- 400 g sheep fresh cheese
- 1 tsp lemon juice
- black pepper

Wash the bell peppers, cut off the stems, remove seeds and white membranes while keeping the fruit intact. Place them in a steamer basket, season with salt, drizzle with oil, and steam covered over boiling water for 6–10 minutes until slightly firm. Remove and let cool.

While the peppers are steaming, rinse the salad leaves and shake dry. Peel and finely grate the garlic with a pinch of salt. Rinse the basil, shake dry, pluck the leaves, and finely chop. Mix the chives and grated garlic into the fresh cheese. Season with lemon juice, salt, and pepper.

Slice each pepper lengthwise and open them. Line each half with a salad leaf and spread the feta mixture on top. Fold the peppers back together and serve.
