- 600 g butternut squash (or muskmelon variety)
- 1 egg
- 2 tbsp brown sugar
- 1 tsp cinnamon
- 1 tbsp flour (as needed)
- rapeseed oil (for frying)
- powdered sugar (for dusting)

Peel, seed, and grate the squash finely using a kitchen grater. Mix with egg, sugar, and cinnamon; if the mixture is too wet to shape, add a little more flour.

Heat rapeseed oil in a non-stick pan and press 2-3 tbsp of the squash mixture into flat pancakes. Fry for about 15 minutes total on medium heat, turning once. Dust with powdered sugar and serve immediately.
